I know it’s been over a week into the new year but regardless, HAPPY NEW YEAR EVERYONE! I’m not one to make a new year’s resolution since I think if you really wanted to change something about yourself, you would’ve started before the new year began. There’s no point in making any alternations just because January 1st felt like a good day to kick start it. Tofutti!
Still, I know most of us are trying super hard to stay fit and healthy and I recently discovered that some of my friends are going through a lifestyle change in the health department. So, my friends and I have been encouraging one another to eat out less, work out harder, and make cooking healthy meals a priority. This made me realize that with every big change we make for our well being, it requires a strong support network and we need love and encouragement to hold us accountable to our goals.
Here is to one of many delicious, easy, and healthy recipes in the new year.
Corn & Avocado Salad
Makes 4 side servings
- 1 15 oz. can of whole kernel corn, drained
- 1 avocado or 1/2 large avocado, diced
- 1 cup of grape or cherry tomatoes cut in half or quarters
- Juice of 1/2 a lime
- salt to taste
- 1/4 cup chopped cilantro
- 1/4 cup chopped red onion
In a large mixing bowl, combine corn, tomatoes, avocado, lime juice, salt, cilantro and red onion Toss well and over grilled chicken, fish, or beef dishes.
