Dill Potato Salad

Oh good ol’ American potato salad! Barbecues, picnics, and 4th of Julys would be incomplete without you. I had lots of fresh dill hanging around the house and it was an interesting proposition since I’ve never had to cook with dill before. A whiff of this fresh herb makes you want to learn how to make your own dill pickles. I honestly didn’t know what to do with them so I decided to make dill potato salad. It turned out great! If any of you have great recipes that incorporate a healthy dose of dill, let me know. I would love to experiment.

5-6 servings

  • 4 medium potatoes of your choice, peeled and cubed
  • 1/4 cup fresh chopped dill
  • 1/4 cup chopped green onion
  • 1/2 medium red onion, diced finely
  • 1 tablespoon yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  1. In a large boiling pot, add diced potatoes and fill cold water to cover potatoes. Bring to a boil for 30 minutes. Drain.
  2. Move the potatoes to a large mixing bowl. Combine all the ingredients and mix well.
  3. Garnish with more chopped dill. Chill before serving.
