White Chocolate & Lemon Cupcakes

Lemon zest is required in this recipe and the moment the lemon is forced to the blade, a bouquet of lemon fills the kitchen. I’m telling you, this kind of simple pleasure, there’s nothing in the world like it. I just love the smell of zested lemon. Buttermilk makes this cake soft and airy and the white chocolate with cream cheese frosting is a perfect pair.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 tablespoons (1/2 stick) unsalted butter at room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon grated lemon zest
  • 1/2 cup butter milk (any fat content)

White chocolate cream cheese icing:

  • 6 ounces white chocolate, melted and cooled
  • 1 stick unsalted butter at room temperature
  • 4 ounces cream cheese at room temperature
  • 2 teaspoons grated lemon zest
  • 1 teaspoon vanilla extract
  • 3 cups confectioner’s sugar
  1. For cupcakes: Preheat oven at 350 degrees.
  2. Sift together flour, baking powder, baking soda and salt.
  3. Using a mixer, using paddle attachment, beat butter and granulated sugar until creamy. Beat in eggs one at a time. Mix in lemon juice and zest then add vanilla. Mix in half of the flour mixture, add buttermilk, and mix in remaining flour mixture.
  4. Line muffin pan with 12 paper liners and add batter 3/4 to the top. Bake on the center rack for 13-15 minutes. Do not allow cupcakes to brown!  Allow cupcakes to cool completely on a cooling rack.
  1. Icing: In a bowl of electric mixer, using paddle attachment, beat melted white chocolate, butter, cream cheese, lemon zest, lemon oil and vanilla together. Gradually add confectioner’s sugar and mix until smooth.
  2. Add icing in piping bag and frost.
