Real Simple Pancakes

In the past, home made pancakes for the whole family on  a weekday morning was out of the question. It’s one thing not having the proper equipment, I really needed a good griddle but had been making pancakes one by one in a nonstick pan *SNORE*. By the time I was done building a stack of jacks for everyone, I was ready for bed again and only coffee was sufficient! Having decided that that’s no way to live, I went out and splurged on a nice griddle pan and am SO excited to be baking 6 flap jacks at a time. YES, I win! Wanna know why? I discovered a super easy 15 minute pancake recipe that would probably work for my busy weekday mornings.

Here we go!

You’ll need:

  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter (you can do this in the microwave for about a minute or 2)
  1. Preheat a lightly greased griddle over medium high heat.
  2. Combine all dry ingredients and make a well in the center. In a separate bowl, beat egg, milk, and melted butter. Pour milk mixture into well of the flour mixture and beat until smooth.
  3. Pour or scoop the batter onto the hot griddle about 1/4 cup for each pancake. Brown on both sides and serve hot with real maple syrup. MMMM ENJOY!
