In the past, home made pancakes for the whole family on a weekday morning was out of the question. It’s one thing not having the proper equipment, I really needed a good griddle but had been making pancakes one by one in a nonstick pan *SNORE*. By the time I was done building a stack of jacks for everyone, I was ready for bed again and only coffee was sufficient! Having decided that that’s no way to live, I went out and splurged on a nice griddle pan and am SO excited to be baking 6 flap jacks at a time. YES, I win! Wanna know why? I discovered a super easy 15 minute pancake recipe that would probably work for my busy weekday mornings.
Here we go!
- 1 cup all-purpose flour
- 1 tablespoon white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup milk
- 1 egg
- 2 tablespoons melted butter (you can do this in the microwave for about a minute or 2)
- Preheat a lightly greased griddle over medium high heat.
- Combine all dry ingredients and make a well in the center. In a separate bowl, beat egg, milk, and melted butter. Pour milk mixture into well of the flour mixture and beat until smooth.
- Pour or scoop the batter onto the hot griddle about 1/4 cup for each pancake. Brown on both sides and serve hot with real maple syrup. MMMM ENJOY!
